2025 Wrapped

This fortnight is the busiest of the year…packed services, big groups, festive chaos, and yet somehow it all feels calm…

Why? Because most of the hard work happened long before now. The menus were written, the big tables locked in, the rotas sorted. Now it’s about doing what we do best…cooking the food, pouring the wine, and embracing the atmosphere of a restaurant full of people enjoying the season!

There’s something grounding about this time…the calm within the storm. A chance to get into the rhythm of service and just focus on execution. Because in the end, that’s what really matters…not how good we are on our best day, but how consistently we can deliver the experience we’ve promised, plate after plate, service after service especially when the busy days come thick and fast!

So, for our final newsletter of 2025, we want to pause for a moment and reflect on our first full year of Wilson’s…and it starts with acknowledging that the restaurant is busy. We know that’s not guaranteed, even in December, and especially when so many people are tightening their belts.

So, to be ending our first full year with full dining rooms is something we’re incredibly grateful for. If you’ve joined us over the last 12 months then we’d like to say thank you…it means the world!

For those who like an end-of-year wrap-up in numbers:

* We’ve served just over 10,000 of you in 2025

* You’ve smashed through 6,000 beef shin nuggets…all braised, cubed and breadcrumbed by hand in the kitchen!

* And knocked back over 1,000 Negronis…so good choices made all round!

Just writing these numbers feels surreal…that’s a lot of people trusting us with their date nights, boozy lunches and family celebrations and it’s a responsibility we take seriously. We hope we’ve earned the right to do it all again in 2026!

Behind all of this is our team. We honestly couldn’t be prouder or more grateful for them and the work they put in to make Wilson’s work. We’ve said it before and we’ll say it again…a restaurant is nothing without the team of people who run it and ours are absolute rock stars!

Looking back 2025 brought some big highs, and a few dispiriting lows…but when we zoom out and look at the year as a whole… we couldn’t be prouder and that feels like a good place to be going into the closing weeks of the year!
