Happy Birthday To Us!

Friday March 7th marked one year since our first service at Wilson’s!

In almost every way, our first year has exceeded what we dared to hope for, and for that, we are incredibly grateful.  We’ve been busy, we’ve had wonderful feedback, we’ve seen familiar faces returning time and again - and despite all the challenges we’ve faced, we’re all still friends!

The first year of any business is a huge milestone - a time to reflect, to celebrate, and to look ahead at what’s to come.

There’s a well-worn saying that 50% of restaurants fail in their first year, and while that may be true, it’s not what keeps us up at night.  In some ways, the first year is the easy part - the adrenaline, the excitement, the boundless energy of a new project can carry you through.  There are always firsts to celebrate—first Christmas, first Valentine’s, first asparagus season!

Year two is when the real work begins.  The excitement settles, and what matters most is delivering consistently - week in, week out - for those who have come to trust us, and living up to the expectations of first-time guests.

Long-term success isn’t built on hype; it’s built on steady, disciplined effort.  Sadly, this is where we have seen many small businesses struggle - when the energy dips and the relentless rhythm of service takes its toll.  We’re determined not to fall into that trap!

We honestly believe we have everything we need to build something lasting:

• A supportive community of regulars who have been instrumental in getting us through this first year and spreading the word—because in the end, no truly great restaurant is built on anything other than repeat local business. Thank you all! 

• An amazing team, some of whom (Edie & Dora!) have been with us since day one. We wouldn’t be here without them…we owe them a lot!

• A shared determination to keep improving and to embrace the challenges ahead. As someone once told us, 100% of the restaurants that make it to 10 years had to make it through year one first!

So here’s to year one - and to many more ahead!
