Where We Eat: Long Chim

This week we celebrated Alina’s birthday, which obviously involved going out for dinner(s), one of which was a long anticipated visit to Long Chim in Soho, a Thai restaurant by David Thompson
David is an incredible chef—funny, charming, and endlessly talented. In the early 2000s, he made history by earning the first-ever Michelin star for a Thai restaurant in London with Nahm. Since then, he’s opened some of the most celebrated Thai restaurants in Australia and beyond, a few of which we’ve been lucky enough to visit
His influence on London’s Thai restaurant scene is undeniable. Chefs behind iconic spots like Begging Bowl, Som Saa, Kolae, and Kiln all spent time working under David’s guidance. Joel also had the privilege of working with him during his years at Busaba, where David consulted on the menu and catching up after all these years was a real joy
The food was obviously sensational and over dinner the conversation turned to reminiscing about the amazing people we’ve been lucky to work with throughout our careers in hospitality. From chefs to managers, waiters to kitchen porters, and founders who’ve inspired us, the list is long!
Hospitality is a remarkable industry, filled with hard working, passionate, and inspirational people and we’re incredibly grateful for the various different paths that led the three of us to the point where we are now and the chance to forge our own path with Wilson’s.
